Inside El Castellano Hotel is “El Salmantino” restaurant, with its colonial ambiance where you can enjoy the most delicious Yucatecan, Mexican and international specialties and exotic signature creations of our Executive Chef. El Salmantino opened its doors on January 20, 2000, and since then has distinguished itself as an innovative, creative restaurant which seeks to constantly renew the options it offers to diners.
Our restaurant in Merida is open every day from 0700 to 2300. Its delicious and nationally renowned Breakfast Buffet is offered 365 days a year to guests and local clients, many of whom are regular visitors. A la carte lunch and dinner are also available. Our menu is a perfect marriage of European and regional dishes.
Our regional specialties are, without doubt, our biggest pride.
Our “El Salmantino” restaurant offers 3 different buffets to the public with the most exquisite variety of dishes. The breakfast, seafood and Sunday buffets delight those who visit from near and far alike and guests are pleasantly surprised by the variety, quality and, above all, flavor of the food.
To speak of the buffet breakfast in “El Salmantino” restaurant is to speak of the most varied and exquisite breakfast of its kind in the country. Juices, prime quality fruit, cereals, salads, hot food station and an extensive selection of dishes such as crepes, fajitas, paella “Salmantina”, as well as delicious fine cakes and pastries and steaming organic Arabic coffee.
Our specialties? The delicious and traditional cochinita, eggs Motuleños, panuchos, mondongo, turkey prepared differently every day, succulent omelettes made with fresh ingredients and, of course, our bolitas de queso: cheese balls whether traditional or in novel, sweet varieties such as nut with rompope, chocolate or strawberry, or savoury with cheese and jalapeño chile, chipotle, etc.
Our Seafood Buffet is served very Friday from 1300 hrs. It is a wild feast of flavors and unexpected seafood varieties: ceviches both classic and exotic with callos de hacha (pen shells), muscles, a unique shrimp aguachile…! Not to mention our seafood pozole or the hot food stand with stuffed salmon, shrimp and clams cooked in their shells with butter, black rice, stuffed baby squid and other classic dishes.
The most acclaimed specialty is undoubtedly the Cheese with Seafood Filling, but the shrimp in chaya sauce, octopus in chirmole sauce, and many others are also delicious. And for those who like innovation there is a seafood bar where you can choose your favorite seafood and let the Chef surprise you with one of his mouth-watering creations, or your own choice of flavor. The variety of desserts is worth a special mention: filled strawberries bathed in chocolate, ciricote custard, yoghurt terrine with wild berries…
Grand Sunday Buffet
The gastronomic specialty buffet is served on Sundays from 1300 and varies every month. During July the buffet features the most representative fare from Spain, including non-alcoholic drinks.
All the El Castellano Hotel consumption centers have DISTINCTIVE “H” certification granted by the Federal Secretariat of Tourism for the management of food and drinks. Holding this distinction means that all the ingredients served in our buffets and used in the preparation of the dishes are of incomparable freshness and processed to the strictest standards. We have held the award since 2007 and it has been renewed year after year with a 100% approval of the standard.
